And that's with t2 CCCs, and faction EANMs (faction hardeners offer the same performance if overheated, otherwise the eanms are better)
Speaking of overheating, did I mention that those tank numbers are with overheated tanking mods, but not overheated dread guns?
So yeh, if you got a friend who's been telling you about how he tanked 10 dreads while taking full damage because he was in triage, he's lying 
You're forgetting Strong Exile Booster (with all compensations max'd) and a max skill Damnation with mindlink. Your example of 3 deadspace eanms + DC + overload on a max skill triage Archon under those conditions would actually be 40,330 dps tank. However, obviously you wouldn't fit like that because there wouldn't be enough cap to actually perform the role.
The fit you see Alaz using in some of the vids is cap stable @24,505 dps overloaded (using only amarr navy eanms and rest t2). Granted 10 dreads will do more than that but that's where you get creative. Over 30,000dps coming in? Smart bomb some Moros drones and neut the revs :) There are some battle reports floating around where I covered that in more detail than I can here.
Obviously preparation is the key, though - if your fleet isn't set for it or you're just jumping to help someone and get ambushed, some dreads will kill you in short order.
As for Archon vs. Chimera - apples and oranges, really. Easier to re-train your triage than re-skill everyone else The Chimera can't run 3 remote shield very well, granted, though shield does hit at the start of the cycle, which is nice. As others have said, it all comes down to who you're repping. If it's a blind-jump-help-a-blue-and-hope-to-tank-to-escalate I guess a Nid is in order to cover all bases.
